Abstract Two-way fermentation was a fermentation method which use medicinal fungi as its fermentation strain, use Chinese traditional medicine or its herb residue as its medium, and constitute fermentative combination together. It’s the effective method deserved to exploration in seeking new Chinese traditional medicinal and strengthen the effect of it and reduce the side effects. Chinese traditional medicine were the civilization treasure through several thousand years history of China .It has so many advantages that it can not be replaced by western medicines.Monascus is important edible and medicinal fungi, it has an abundant enzyme producing system.. Monascus has effectively functions to decrease blood sugar, blood fat and blood pressure. Monascus pigment, one of the Monascus’ secondary metabolites, is natural food colourant.To carry on this study, we laid a foundation to the Monascus two way fermentation, and promoted the development of fungi medicine. we put forward a innovative idea in this paper, about fermentation system — — use Monascus to ferment about 50 kinds of Chinese medicinal materials ,the materials are typical in Guizhou province .In order to study the interaction of Chinese medicinal materials and Monascus during the fermentation process. By observe the growing situation of Monascus, we found 16 kinds of them which growth well, they are Cassia occidentalis, Potygonum multiflorum, Cattail pollen, Hawthorn, Polygonum cuspidatum, Gynostemma pentaphylla, Herba taxilli, Ginkgo biloba. Those medicinal can promote the growth and metabolism of Monascus. We studied the cultivating conditions including inoculation stage and inoculums and liquid volume in flask, and the medium of the fermentation system, and we found the best condition to those system.
