本次研究目的為開發一種新型的食品包材─玉米醇溶蛋白複合薄膜,將其複合配方和機械性質進行探討。當聚丙烯 (PP) 膜 的塗層含有高濃度的玉米醇溶蛋白 (15%) 及乙醇 (95%) 時,能提高水蒸氣通透率 (WVP)、氧氣通透率 (OP) 和拉伸強度。然而,增塑劑的添加能增加薄膜的滲透性,但仰賴於增塑劑的濃度。因此複合聚乙二醇 (PEG)的玉米醇溶蛋白塗佈於PP膜,相對能增加水分吸收和滲透性。除此之外,玉米醇溶蛋白/大豆分離蛋白 (CZ/SPI)薄膜比起NY/mLLDPE薄膜有較高的氣體阻隔性,以至於使包裝袋中有較低的含氧量,進而減少橄欖油的酸敗。

Abstract
In this study, a novel film structure of corn zein complex for food packaging pplications was developed, and the mechanical properties of the resulting coated film, as affected by the coating formulation, were investigated. The improvement of water vapour permeability (WVP), oxygen permeability (OP) and tensile strength properties of coated polypropylene (PP) films were obtained for high concentrations of both corn zein (15%) and ethanol (95%) in coating solutions. Besides, plasticizers increase permeability of the films depending on the concentration of plasticizer used. Therefore, polyethylene glycol (PEG) plasticized zein coating on PP films resulted in relatively large amounts of water sorption and higher permeability. In addition, corn zein/soy protein isolate (CZ/SPI) bilayer film still had higher oxygen barrier properties than the nylon-metalocene catalyzed linear/low-density polyethylene (NY/mLLDPE) film. The higher oxygen barrier property of CZ/SPI bilayer films resulted in a lower oxygen concentration in the pouch headspace than in the NY/mLLDPE film pouches, which led to reduced lipid rancidity in olive oil .
