北京油鸡与文昌鸡屠宰性能对比研究

摘 要:北京油鸡与文昌鸡是我国一南一北的当家优质地方鸡品种,以肉质佳良而著称。
本研究在北京地区对二者进行饲养,16 周龄屠宰性能对比研究显示,二者宰前活重没有差
异。由于北京油鸡羽毛丰满,其公母平均屠宰率比文昌鸡低5 个百分点。北京油鸡胫爪、翅
膀率和腿比例高于文昌鸡(P0.01 ),胸肌比例略高(P0.05 ),腿肌比例无差异。文昌鸡母
鸡脂肪沉积能力非常强,其腹脂率和皮下脂肪厚都显著高于北京油鸡 (P0.01 )。品尝试验
也证实脂肪含量与鸡汤香气和肉质存在一定的关系。本研究为以后对地方优质黄羽鸡的研究
提供了很好数据理论基础。

Wenchang Chicken

Abstract: Beijing You chicken and Wenchang chicken are both excellent local breeds in
china, which are famous for their favorite meat quality. In this study, both were reared in Beijing
and slaughtered at 16 weeks. The comparison study indicated there were no significant different
between the live weight. However, because the Beijing You chicken has more feather coverage,
the slaughter rate was 5 percent lower than that of Wenchang chicken. But the Beijing You
chicken had a significantly higher percentage of claw, wing and leg weight (P0.01). And the
percentage of breast muscle weight of Beijing You was also slight higher than that of Wenchang
chicken (P0.05). The percentage of thigh muscle weight between the two breeds was not
different. The percentage of abdominal fat and the subcutaneous fat thick
