枸杞茶复合饮料的研制 摘要 枸杞作为保健食品,已得到广泛应用。随着人类社会的不断进步,人们生活水平的不断提高,饮料的消费量与日俱增,尤其是天然的、既有营养又有药理作用的保健饮料已倍受消费者欢迎。因此,开发枸杞茶复合饮料有着极大的潜力和广阔的前景。本文以枸杞和红茶为原料,以柠檬酸、白砂糖、Vc为辅料,采用对比试验来选择枸杞汁和茶汤的最佳浸提条件,采用正交试验来确定饮料的最佳配方,并选用不同含量的果胶酶,稳定剂等条件确定其最佳稳定效果。经过试验得出枸杞汁的最佳超声波浸提工艺是:料水比为1:10, 浸提温度75℃ , 普通浸提时间40min。茶汤的最佳超声波浸提工艺是:料水比为1:100, 浸提温度75℃ , 普通浸提时间30min。枸杞茶复合饮料的最佳配方为:枸杞汁10%、茶汤40%、柠檬酸0.1%、Vc 0.2%、白砂糖5%。饮料最佳稳定效果:0.20%羧甲基纤维素钠。 关键词: 浸提,正交试验,稳定性,复合饮料 Wolfberry tea compound beverage Wang Yucheng Abstract Wolfberry as a health food, has been widely used. With the continuous progress of human society, it is the continuous improvement of living standards, increasing consumption of beverages, especially natural, both nutritional and pharmacological effects of the health drink has been popular with consumers, therefore, the development of Chinese wolfberry drink tea compound has great potential and broad prospects. In this paper, wolfberry and black tea as raw materials and citric acid, sugar, Vc, for the material, the use of contrast tests wolfberry juice and tea to choose the best extraction conditions, the use of orthogonal test to determine the best formula beverage and choice of Pectinase different content, stability, etc. to determine the optimum conditions for the stability of results. Test drawn after the best ultrasound wolfberry juice extraction process are: feed-water ratio of 1:10, extraction temperature 75 ℃, extraction time general 40min. The best tea ultrasonic extraction process is: 1:100 ratio of feed water, extraction temperature 75 ℃, extraction time general 30min. Wolfberry drink the best tea compound formula: wolfberry juice 10%, tea 40%, citric acid 0.1%, 5% sugar. Drink the best stability results: 0.20% sodium carboxymethyl cellulose.
