China’ssweet potato processing industry is in an accelerated development stageof transformation and upgrading. The authors comprehensively analyzedthemarket demandofsweet potatopost-production processing, sweet potato processing enterprises, regional distributionof production and processing ofsweet potato, structure of sweet potato industryand so on in China. And the authors also expounded thedevelopmentsituation of sweet potato starch processing industry, sweet potato snack food processing industry and sweet potato ethanol processing industry, and prospectedtheir development trend in the future.
