电子鼻技术及在奶制品中的应用研究进展 贾宗艳1 2 1 ，任发政 ，郑丽敏 （中国农业大学 1 信息与电气工程学院 2 食品科学与营养工程学院，北京 100083） 摘 要：电子鼻是使用一系列化学传感器来探测挥发性有机化合物以及用绘图识别软件来检查产生的化学指纹 图谱的装置。很多可应用的电子鼻是由金属氧化物、传导性聚合体或聚合体合成物构成。本文介绍了电子鼻的 基本组成及工作原理；并从电子鼻系统的角度叙述了传感器技术和模式识别技术的发展现状及趋势；综述了电 子鼻在奶制品识别中的应用，主要包括不同保质期的牛奶的识别，以及不同产地不同风味奶酪的鉴别，细菌检 测和生产过程监控；最后展望了电子鼻在奶制品中的应用前景及其存在的问题。 关键词：电子鼻 奶类制品 传感器阵列 The electronic nose and the development of its application to classify of dairy products Jia Zongyan Ren Fazheng Zheng Limin (1.College of Information Electrical Engineering 2.College of Food Science Nutritional Engineering, China Agricultural University, Beijing China,100083) Abstract ：The electronic nose is a novel sensory system. An electronic nose is used to detect the volatile organic compositions （VOC ）with a series of chemical sensors. And then chemical fingerprints will come about and be checked up with the recognition software. Most of sensor arrays in industry are composed of metal oxide sensors (MOS), conducting polymer sensors (CP) or polymer complex sensors. The principle and constitutes of electronic nose were given in this paper. The current trends in the development of sensor techniques and pattern recognition were described from the point of view of an e-nose system. Special references to applications to dairy products, such as the milk with different shelf-lives and cheese with different geographic origin, detection bacteria and process control and monitor， were summarized then.
