ABSTRACT
nols, flavonoids, quinones, tannins, alkaloids, saponins,
and sterols which are important sources of biocides and
many other pharmaceutical drugs [2-8]. Medicinal plants
are important in pharmacological research and drug de-
velopment [9]. The most important secondary plant me-
tabolites are phenols and flavonoids [10,11], they have
distinctive biological activity as natural antioxidants which
exceed many other synthetic ones [12].
Antioxidants are used to preserve food quality mainly
because they arrest oxidative deterioration of lipids [13,
14]. Moreover, the exploration of naturally occurring
antimicrobials for food preservation receives increasing
attention due to consumer awareness of natural food pro-
ducts and a growing concern of microbial resistance to-
wards conventional preservatives [15]. These factors have
inspired the widespread screening of new plant species
for possible medicinal and antioxidant properties, while
the isolation and characterization of diverse phytoche-
micals [16,17].
The relationship between oxidative stress and antioxi-
dants is very often explained in a very simple manner.
