English Abstract Abstract The form of language is complex and diverse and language reflects all aspects of people‟s life. With the contact between different languages, the usage of language will also change. Along with the change of times and the development of economy, people contact with each other more frequently. The phenomenon of coexistence of various languages is commonly seen all over the world. More and more sociolinguists focus on the issue of bilingualism or multilingualism The study, based on bilingualism study of sociolinguistics, investigates the language use and employees‟ attitudes towards Putonghua in catering industry in Xiangtan urban districts. The author investigates 30 different levels of restaurants in Xiangtan urban districts. The subjects of this study are 98 employees from these 30 restaurants. The author tape-records the informants‟ naturalistic conversation and applies participant and non-participant observation to collect real and natural linguistic data. All these data obtained are analyzed through the distributional analysis and the multivariate analysis. The author also designs a questionnaire to investigate the 98 subjects‟ language attitudes towards Putonghua. Finally, the author makes quantitative analyses to analyze the collected data with the mathematical statistics methods by Goldvarb X program, Excel 2007 and SPSS (13.0). Through the investigation, it is found that Putonghua and Xiangtan dialect are two major language varieties used by employees in catering industry in Xiangtan urban districts.
