NaOH 溶液,在 70 加热 60m in为叶绿素皂化的最佳条件, 然后将皂化溶液的 pH值调为 3. 0,

A bstrac t: Naturalwatersoluble green pigment named sodiumironchlorophyllinwas prepared from bamboo leaves
which isakind ofwaste in bambooprocessing. Two key preparationprocesses saponification and iron substitution
reaction and the stabilityof the pigmentwere investigated. Itwasfoundthat optmi um conditionsof saponificationwere
sodium hydroxide5% and temperature 70 for 60 min. At pH value 3. 0, temperature of water bath 60 for
60m in, a high proportion of sodiumironchlorophyllinwasobtained. ThepH value in the range of 3. 0- 6. 0 had no
effect on stability of sodiumironchlorophyllin obtained and itwas stableagainst heat, room light and reducing agent.
The results showed that sodiumironchlorophyllin from bamboo leaves is a kind of excellent natural edible green
pigment.
