中国农学通报2011,27(23): 109-113 Chinese Agricultural Science Bulletin 气调对石榴采后果皮褐变及贮藏品质的影响 赵迎丽,李建华,施俊凤,张晓宇,王 亮,王华瑞 (山西省农业科学院农产品贮藏保鲜研究所,太原030031) 摘 要:以‘新疆大籽’石榴为试材,就不同气体成分对其采后果皮褐变机理及果实贮藏效果进行研究。 结果表明:8℃下,石榴果实采后的可溶性固形物与可滴定酸含量均呈递减的趋势,且随着贮藏期延长, 膜脂过氧化产物丙二醛含量缓慢增加,细胞膜透性逐渐增大;与对照相比,适宜的气调贮藏参数(5% CO ,3%~5% O )可减缓石榴果皮细胞膜透性的升高以及膜脂质过氧化产物丙二醛的积累,抑制多酚氧 2 2 化酶活性的增加,并减少酚类物质的氧化,有效地减轻石榴褐变的发生,保持果实品质。 关键词:石榴;气调贮藏;采后生理;褐变 中图分类号:S665.4 文献标志码:A 论文编号:2011-0057 EffectofControlledAtomosphereonPost-harvestPericarpBrowning andStorageQualityofPomegranate ZhaoYingli,LiJianhua,ShiJunfeng,ZhangXiaoyu,WangLiang,WangHuarui (Institute of Farm Produce Storage and Freshening, Shanxi Academy of Agricultural Sciences,Taiyuan030031) Abstract: The post-harvest physiology and mechanism of pericarp browning of ‘Xinjiang bigger seeds’ pomegranatesundercontrolledatmospherestorageswerestudied.Theresultshowedthatsolublesolids,and titratableacidcontentofpomegranatefruitsdecreasedgraduallyduringstorage.Meanwhile,theMDAcontent andmembranepermeabilityofpericarpslowlyincreased.Thepeelpolyphenoloxidaseactivityshoweda decliningtrendandthecontentofphenolicsubstancesdeclinedslightlyaftertheearlyincreasewithextension ofpreservation.Comparedwiththefruitstoredat8℃,theCAtreatmentssignificantlyalleviatedtheincreaseof membrane permeability, reduced the accumulation of malondialdehyde (MDA) content, inhibited the polyphenoloxidaseactivityanddecreasedtheoxidationofphenolicsubstancesofthepomegranatepericarp.
