喷雾干燥法制备水溶性核桃油粉末工艺研究   [摘要]目的 以超临界CO2制备的核桃油为原料,首次用含我司制的蛋黄蛋白粉为壁材,制备水溶性核桃油粉末。方法 主要分别考察两组壁材的搭配和配比。据核桃油包埋的情况,以确定壁材麦芽糊精、大豆分离蛋白的配比;及据核桃油包埋得率的结果,以确定壁材大豆分离蛋白、蛋黄蛋白粉的配比。综合上述两组结果,以确定壁材麦芽糊精、大豆分离蛋白和蛋黄蛋白粉的配比。采用喷雾干燥包埋方法制备水溶性核桃油粉末。结果 首次用含我司制的蛋黄蛋白粉为壁材,具体为麦芽糊精∶蛋白粉=3∶1,其中大豆分离蛋白∶蛋黄蛋白粉=1∶1,制得的水溶性核桃油粉末成型和包埋效果好,质量甚至达到婴儿食品标准水平,同时提供宏量营养素,延长了保质期,方便携带,适合各种年龄段或需喂饲人士服用。结论 喷雾干燥包埋技术采用含蛋黄蛋白粉为壁材制备水溶性油脂粉末,为功能性动植物油脂市场的开发提供了多元化。   [关键词]喷雾干燥;水溶性油脂粉末;蛋黄蛋白粉;功能性动植物油脂   [中图分类号] R201.1 [文献标识码] A [文章编号] 1674-4721(2017)05(c)-0097-04   [Abstract]Objective To prepare the water soluble walnut oil powder using walnut oil prepared by supercritical CO2 extracted as raw material and the egg yolk protein used as wall material and made by our company partly for the first time.Methods Two groups of composition and proportion of wall materials were studied, respectively.One group was maltodextrin and soybean protein isolate,the other was soybean protein isolate and egg yolk protein.The former group was assured by embedded state,while the latter one was assured by embedded yield of walnut oil as water soluble oil powder.The proportion of the three kinds of wall materials was determined by the results of the two groups together.Spray drying was adopted to embed walnut oil in powder as water soluble oil powder.Results Egg yolk protein produced by my company was used as one of wall materials by the first time.Proportion of maltodextrin and soybean protein isolate was 3:1,in which soybean protein isolate and egg yolk protein was 1:1.They were used to produce water soluble oil powder effectively.The oil powder was formed well,so did the embedding effectiveness.Judged by national food safety standard infant formula even, the oil powder was safe in qualities.Macronutrients were provided to people.Walnut oil shelf-life was extended.Equipment and appropriate were convenient for any age or those who need feeding.Conclusion Spray drying and embedding technology preparing water soluble oil powder using egg yolk protein partly co
