树芽类山野菜资源研究与繁殖利用 　　摘要：山野菜体内含有蛋白质、碳水化合物、矿物质营养元素、食用纤维素等营养成分，同时富含多种氨基酸、微量元素、维生素，是既有营养又具有保健作用的绿色蔬菜。作者对常见的刺嫩芽[Aralia elata （Miq.） Seem.]、刺五加 [Eleutherococcus senticosus （Rupr.et Maxim） Harms]、五味子[Schisandra chinensis （Turcz.） Baill.]这3种树芽类山野菜的资源分布、营养成分、食用方法、种质资源创新、繁殖特点、加工利用等研究方面进行了综合述评，指出树芽类山野菜资源丰富，集天然、营养、保健于一身，而且风味独特，易于人工繁殖培育，是重要的林下经济资源，极具开发利用价值。 　　关键词：树芽类山野菜；资源；繁殖利用 　　中图分类号：S789.4；S647；S602.4 文献标识码：A 文章编号：0439-8114（2015）14-3423-04 　　DOI：10.14088/j.cnki.issn0439-8114.2015.14.023 　　Resource Research and Propagation Utilization of Tree-Bud-Kind Wild Edible Herbs 　　LIU Zai-min1，2，DONG Ran1，JIANG Xin-mei1，2，YU Xi-hong1，2，WANG Wei1 　　（1. They are green vegetables rich in nutrition， and have health care effect in the meantime. The resources distribution， nutritional ingredient， the methods of eating， the innovation of germplasm resources， multiply characteristic， processing and utilization of three tree-bud-kind wild herbs， consist of Aralia elata （Miq.） Seem， Eleutherococcus senticosus （Rupr.et Maxim） Harms and Schisandra chinensis （Turcz.） Baill. are summarized，.
