Abstract:The synthesis reaction of sucrose6acetate( s6a)w ith sucrose( s) and glucose6acetate( g
6a) catalyzed by fructosyltransferase fromA spergillus oryzae was investigated. The effects ofmass ratio
of reactantsm ( g6a)m ( s), reaction temperature, reaction tmi e, pH, mass concentration of enzyme on
the reaction were examined. The onefactor expermi ental results showed that the optmi um yield was
obtained at 50 , pH = 62, m ( g6a) m ( s) = 13, reaction tmi e 48 h and mass concentration of
enzyme40 g/L. On this condition themolar convert ratio of g6awas 2669%.
