动物源性食品产地溯源技术研究进展孙淑敏 1 , 2 ，郭波莉 1 ，魏益民 1 动物源性食品产地溯源技术研究进展 孙淑敏 1 , 2 ，郭波莉 1 ，魏益民 1 , * ，樊明涛 2 (1.中国农业科学院农产品加工研究所，北京 1 00193；2.西北农林科技大学食品科学与工程学院，陕西 杨凌 7121 00) 摘 要：随着消费者膳食结构的改变和安全意识的增强，动物源性食品的产地来源已成为人们关注的焦点问题之一。 食品的产地溯源是食品追溯体系中重要的组成部分，它既有利于保护消费者的利益，保护地区品牌和特色产品，确 保公平竞争，又能有效地实施产品召回，防止食源性病原菌的扩散。稳定性同位素分析、矿物元素含量分析以及 化学成分分析法被认为是进行食品产地溯源的有效技术手段，具有很好的发展前景。本文主要综述几种溯源技术的 基本原理，介绍其在动物源性食品产地溯源中的应用现状及存在的问题，并对今后的发展提出相关建议。 关键词：动物源性食品；产地溯源；稳定性同位素；痕量元素；化学成分分析 Advance in the Research of Analytical Approaches to Trace Geographical Origin of Animal-derived Foods SUN Sh u-min1, 2，GUO B o-li1，WEI Yi-min1, *，FAN Ming-tao2 (1.Institute of Agro-Food Science and Technology, Chinese Academy of Agricultural Sciences, Beijing 100193, China ； 2. College of Food Science and Engineering, Northwest A F University, Yangling 712100, China) Abstract ：Due to the change in diet habits and increasing health awareness, consumers are paying tremendous attentions to the geographical origin of animal-derived food products. As one of the most important parts in food traceability system, geographical origin of food products can be used to not only protect interests of consumers, regional brand and specialty products for ensuring fair competition, but also effectively implement product recall for preventing against the transmission of food-borne pathogens. Analyses of stable isotopes, trace elements and chemical compositions of foods are effective analytical tools to trace geographic origin of food products, which exhibits quite prospects. In this paper, current development status quo and problems in the determination of geographical origin of animal-derived foods, and basic principles of these methods are discussed. The future development directions are also proposed.
