Progress in the research and application of the Eurotium cristatum

Abstract :Eurotium cristatum is the dominant fungus in the fermentation of Fu-brick tea． The quantity
and quality of E． cristatum are directly related to the quality of brick tea．Extensive studies had been done．
We review the researches in the isolation and identification ，molecular biology ，cultivation ，growing process
of the so-called golden flower fungus E． cristatum ． We also indicate the research and application
prospects of E． cristatum．
