Inaddition, anthocyaninscanalsooccur“ self-association”, “ adsorp- tion”, “ crystallization”, whichincreasedthestabilityofanthocyanins.A theoreticalbasisforthesta- bility-miprovingofanthocyaninsbymelioratingtheirmolecularstructureswasprovided.
