2011 No.11 · · Serial No.236 China Brewing 196 Product Development 冬凌草保健饮料的生产工艺研究 鲁国荣 (许昌职业技术学院,河南 许昌 461000) 摘 要:采用对比分析、数理统计和正交试验等方法,对配比、浸提温度和调配等工艺进行了研究,获得了制作冬凌草保健饮料的最 佳工艺及配方:冬凌草鲜汁用量4% ,苹果酸0.10%,柠檬酸0.10%,果胶0.15%和CMC-Na 0.18%,可获得营养丰富、风味独特,具有良好 的悬浮稳定性和流动性,不分层、无沉淀、糖酸比合理产品,保质期可达6个月以上。 关 键 词:冬凌草;正交试验;配方;工艺 中图分类号:TS275.4 文献标识码:B 文章编号:0254-5071 (2011)11-0196-03 Production technology of Rabdosia rubescens health drink LU Guorong (Xuchang Vocational Technology College, Xuchang 461000, China) Abstract: Comparative analysis, mathematical statistics and orthogonal test method were adopted to optimize the production technology of the health drink including the ratio, extraction temperature and blending process. The optimal formulation was determined by orthogonal test as follows: the amount of Rabdosia rubescens juice 4%, malic acid 0.1%, citric acid 0.1%, pectin 0.15% and CMC-Na 0.18%. Under these conditions, the product had good nutrition and unique flavor, and it was stable and has no layer and precipitation. The ratio of sugar and acid was suitable. The shelf life of the product was up to 6 months.
