2 万方数据 目录 中文摘要····························································4 Abstract ····························································5 缩略词 ····························································7 1 引言····························································8 2 材料与方法 ·················································10 3 结果·············································18 4 讨论 ·············································32 5 结论与建议·············································35 6 参考文献 ···············································36 综述 ·············································42 硕士期间发表的论文 ·············································49 致谢 ·············································50 3 万方数据 福建省居民常用食物中碘含量的分析及 居民膳食碘摄入量的研究 中文摘要 碘是人体必需的一种微量营养元素,碘元素的摄入与人体健康关系密切,碘 的缺乏与过剩都会导致某些疾病的产生,也是环境学、卫生学与营养学研究的重 要问题。近年来,关于我国沿海地区居民碘摄入量的问题备受关注,为了进一步 了解我国沿海地区居民的碘营养状况,积极推进“因地制宜、分类指导、科学补 碘”的防控策略,2010 年福建省疾病预防控制中心开展了总膳食调查,在此基 础上,本课题采用《WS302-2008 食物中碘的测定》检测了福建省不同地理区域 居民常用食物中的碘含量并应用单个食物的选择性研究方法对福建省居民膳食 碘摄入量进行研究。得到以下主要结论 1. 不同食物含碘量具有显著性差异,同一种食物在不同地区其含碘量也具 有一定差异。谷类及其制品的食物中含碘量最高的为面条、面包、及蛋糕,薯类 食物平均含碘量较低,豆类食物中含碘量最高的为熟花生。不同的蔬菜食物中, 叶类和根茎类蔬菜含碘量要高于其他种类蔬菜;莲藕中含碘量为 54.56 ± 72.03 µg/100g,显著高于其他蔬菜,蒜是所有蔬菜中含碘量最低的未检测出。水 产品中碘含量范围为1.23µg/100g~99.89 µg/100g,不同类型水产品中碘含量甲壳 类 50.79 ±36.00 µg/100g 海鱼类 32.48 ±27.79 µg/100g 软体类 23.33 ± 5.45 µg/100g 淡水鱼3.35 ±2.85 µg/100g。肉类食物中,动物内脏碘含量较高,其 他禽畜中鸭肉 20.06 ±38.93µg/100g 鸡肉 7.56 ±14.94 µg/100g 牛肉 0.64 ± 0.45 µg/100g 。水果类、饮料类和酒类食物中含碘量均较低,乳类制品中纯牛奶
