北京市职业高中烹饪专业课程设置研究 ABSTRACT The curriculum mfonn of secondary vocational education iS the most important part of vocational education reform.Taking cuisine special哆 curriculum development as all example of secondary vocational curriculum research,we Call easily learn the principals and process in secondary vocational curriculum design.Furthermore,the development of cuisine curriculum would enhance the quality of students’instruction and fulml the industry needs. This thesis conducts a survey about Cuisine Specialt、r curriculum development in three secondary vocational schools and ten restaurants in Beijing.Based on the survey,I analysis the present-day situation as well as the existing problems.At last,I give my opinion on how to improve the curriculum in cuisine specialty. The thesis consists of the following three parts: Part 1:It introduces the background of the curriculum reforill in secondary vocational school,the existing carriculum models in nowadays around the world and the history of cuisine curriculum research. Part 2:Based on results of survey in scheels and restaurants.I point out the problems in school education,and analysis the reasons as follow:the message block between schools and industry;the indifferent attitude of the industry to school education;the process of the curriculum design is short of systematism;the shortage of teachers and dated materials. Part 3:According tO the problems found in the survey,I give my opinion on how to improve the curriculum in cuisine specialty as follow:establish the scientific goals;follow the principals of curriculum design;optimize the structure of curriculum.
