[Methods] 20g / L Na2CO3 solution at 90 ℃ under the conditions of mushroom polysaccharide extracts, using phenol sulfuric acid colorimetry  quality of mushroom polysaccharides. [Results] per kg matsutake in can be measured quality of mushroom polysaccharide 33.1g. [Conclusion] The optimum extraction conditions were 90 ℃ , 20g / L of Na2CO3. Then Phenol sulphate colorimetry was used to determine the content of polysaccharides of the tricholoma matsutake.RESULTSThe content of polysaccharides of the tricholoma matsutake is 33.1g.CONCLUSIONThe condition of extraction of polysaccharides in the tricholoma matsutake is 20g / L Na2CO3 extraction in 90 ℃ .
