[Methods] 20g / L Na2CO3 solution at 90 ℃ under the conditions of mushroom polysaccharide extracts, using phenol sulfuric acid colorimetry  quality of mushroom polysaccharides. [Results] per kg matsutake in can be measured quality of mushroom polysaccharide 33.1g. [Conclusion] The optimum extraction conditions were 90 ℃ , 20g / L of Na2CO3. [Keywords:] Polysaccharides; plant extracts; plants, medicinal ABSTRACT: OBJECTIVETo study the methods of extraction and determination of polysaccharides in the tricholoma matsutake.METHODSCrude polysaccharides were obtained from the tricholoma matsutake throuth 20g / L Na2CO3 extraction in 90 ℃ , boiling water extraction. Then Phenol sulphate colorimetry was used to determine the content of polysaccharides of the tricholoma matsutake.RESULTSThe content of polysaccharides of the tricholoma matsutake is 33.1g.CONCLUSIONThe condition of extraction of polysaccharides in the tricholoma matsutake is 20g / L Na2CO3 extraction in 90 ℃ .
