Despitethelackofinternationalagreementregardingthede?nitionandclassi?cationof?ber,thereisestablishedevidenceonthe roleofdietary?bersinobesityandmetabolicsyndrome.Betaglucan(β-glucan)isasoluble?berreadilyavailablefromoatand barleygrainsthathasbeengaininginterestduetoitsmultiplefunctionalandbioactiveproperties.Itsbene?cialroleininsulin resistance,dyslipidemia,hypertension,andobesityisbeingcontinuouslydocumented.Thefermentabilityofβ-glucansandtheir abilitytoformhighlyviscoussolutionsinthehumangutmayconstitutethebasisoftheirhealthbene?ts.Consequently,the applicabilityofβ-glucanasafoodingredientisbeingwidelyconsideredwiththedualpurposesofincreasingthe?bercontent offoodproductsandenhancingtheirhealthproperties.Therefore,thispaperexplorestheroleofβ-glucansintheprevention andtreatmentofcharacteristicsofthemetabolicsyndrome,theirunderlyingmechanismsofaction,andtheirpotentialinfood applications. 1.Introduction attributedtotheirlow-glycemicpropertiesandtheirdietary ?ber content.
