Methods: Prospective population-based cohort study, including 20,069 men and women aged 20 to 65 years, enrolled between1993and1997andfreeofcardiovasculardiseaseatbaseline.Dietwasassessedusingavalidated178-itemfood frequencyquestionnaire.Hazardratios(HR)werecalculatedforCHDincidenceusingmultivariableCoxproportionalhazards models. Results:Duringameanfollow-uptimeof10.5y,245incidentcasesofCHDweredocumented,whichcomprised211non- fatalacutemyocardialinfarctionsand34fatalCHDevents.TheriskofCHDincidencewas34%lowerforparticipantswitha highintakeoftotalfruitandvegetables(.475g/d;HR:0.66;95%CI:0.45–0.99)comparedtoparticipantswithalowtotal fruitandvegetableconsumption(#241g/d).Intakeofrawfruitandvegetables(.262g/dvs#92g/d;HR:0.70;95%CI: 0.47–1.04)as wellasprocessed fruitandvegetables(.234g/dvs#113g/d;HR:0.79;95%CI:0.54–1.16) wereinversely relatedwithCHDincidence. Conclusion:Higherconsumptionoffruitandvegetables,whetherconsumedraworprocessed,mayprotectagainstCHD incidence.
