万方数据 万方数据 《红楼梦》饮食词语研究 中文摘要 《红楼梦》中的饮食文化，真实地再现了明清时期的饮食文化风貌，特色 鲜明，是后世学习和研究明清饮食文化的珍贵文献材料。虽然目前学术界和饮 食界已有专家学者对之进行了研究，但还有很大的探索空间。本文旨在从语言 学的视角对《红楼梦》中的饮食文化现象进行全面深入的研究。 本文把饮食词语划分为菜品、羹汤、主食小食、饮品、干鲜果品、食器六 大类，并从音节数量角度对饮食词语结构进行具体分析，得出双音节词语数量 和多音节词语数量增多的语言发展规律，最后从饮食词语显示人的身份和地位 角度进行进一步探讨，从而全面清晰地呈现出《红楼梦》中的饮食状况，为《红 楼梦》研究和明清时期的饮食文化研究提供材料。 关键词：红楼梦，饮食词语，考释 I “A Dream of Red Mansions” diet words research Abstract A Dream of Red Mansions in food culture faithfully reproduces the food culture style of the Ming and Q ing dynasties, it has prominent features, and it is literature materials that we later study and research of the food culture of the Ming and Q ing precious. Although the experts and scholars have been studying the food culture in academia and catering sector, there is still much space to explore. This article aims to in-depth study the cultural phenomenon of A Dream of Red Mansions in the diet from the linguistics perspective. First the diet words are divided six categories: dishes, soup, staple foods, snacks, dinks, fresh and dried fruit, fresh. Secondly, the diet words are structured specific analysis from the point of view of syllable quantity. Come to the language development law that the number of two-syllable words and the number of multi-syllable words increase day by day. Finally, I will further investigate the diet words from the view of the persons identity and status. A Dream of Red Mansions diet will fully and clearly reveal. It provides materials for studyingA Dream of Red Mansions and the food culture of the Ming and Qing dynasties.
