AbstractABSTRACT Abstract ABSTRACT The blood resources of livestock and poultry in our country al e so plentiful,but the processing technique of animal blood by—products has been largely falling behind 、Ⅳith utilization rate below 1 0%resulting in the big loss of those precious nutritional resources.To solve the problem of blood resource waste and to provide one type of high—performance zinc—reinforcement preparation,this research adopted duck blood as the raw material,and through the cell—breaking,biologic phase enzymolysis and membrane fractionation techniques we obtained micromolecule hemepeptide,heme and orosin.Followingly,through the chelation of hemepeptide and zinc source we prepared peptide-zinc chelation salt of high biologic utilization rate.The research contents are listed below: 1.The water swelling method and hilgh pressure microfluidization treatment could wonderfully promote the breaking and haemolysis of blood cells and lower the mean diameter of red blood cells. 2。Four proteases were used to carry Out the hemoglobin enzymolysis、肮tll their effects compared to select out proteinase neutral,alkaline proteinase and flavor proteinase for carrying out phase enzymolysis.Adopting the quadratic regression universal rotation orthogonal design and SAS software for response surface analysis, we established the mathematical model of the effect of PH value,hydrolysis temperature and time during the synchronous enzymolysis technology of proteinase neutral and favor proteinase on the degree of hydrolysis. 3.111e ultrafiltration membrane with molecular cut.off at 3000Da Was used to purify the micromolecule hemepeptide;the acidic acetone(pH3)Was used to punfy heme;the fractional precipitation method Was used tO purify orosin of duck blood. 4.The physico—chemical and functional properties of micromolecule hemepeptide,heme and orosin were determined by international methods and then compared with that of the same kind of domestic products. 5.Adopting the micromolecu
