第22 卷第5 期 高 校 化 学 工 程 学 报 No.5 Vol.22 2008 年10 月 Journal of Chemical Engineering of Chinese Universities Oct. 2008 文章编号：1003-9015(2008)05-0797-06 单细胞AA 油喷雾干燥微胶囊化壁材包埋性能的研究 吴克刚, 柴向华 (广东工业大学 食品科学与生物工程系, 广东 广州510006) 摘 要：采用喷雾干燥法微胶囊化单细胞AA 油，探讨几种壁材的包埋性能。实验结果表明，常用的几种水溶性壁 材中变性淀粉具有最高的包埋效率，但是其微胶囊化的AA 油氧化稳定性很差，氧化稳定性较高的是乳蛋白；复合 壁材中添加玉米糖浆对单细胞AA 油的微胶囊包埋效果和氧化稳定性都是极为有利的，无论在干燥状态还是在溶液 中其氧化稳定性都是最高的。微胶囊的表面形态观测发现，除了阿拉伯胶的微胶囊表面多呈凹陷、皱缩现象外，其 它壁材的微胶囊基本为光滑圆球形；复合壁材AW01 微胶囊表面未观测到明显的裂纹，而其它均发现明显裂纹或裂 缝。 关键词：微胶囊；壁材；喷雾干燥；单细胞AA 油 中图分类号：O648.2 ；TQ640.6 ；TS225.6 文献标识码：A Performance of Various Shell Materials for Microencapsulation of Single Cell Oil Rich in Arachidonic Acid by Spray Drying WU Ke-gang CHAI Xiang-hua (Food Science and Bioengineering Department, Guangdong University of Technology，Guangzhou 510006, China) Abstract: Performance of several shell materials was investiged for the microencapsulation of single cell oil rich in arachidonic acid (AA) by spray drying. It was found that the microcapsule encapsulated with modified starch exhibits the highest microencapsulating efficiency and the lowest oxidative stability of AA oil in it. As to the oxidative stability of the AA oil microcapsule, the milk protein is the best shell material among common water-soluble shell materials. Addition of corn syrup into complex shell material is advantageous to microencapsulating efficiency and oxidative stability of AA oil microcapsule in dry state or in aqueous solution.
