项目六 酒水服务 Project 6 Beverage Service 任务1 认识酒水 Task 1: The Basic Knowledge of Beverage 情境导入不可忽视的酒水服务 01/常见酒水Common alcoholic beverage酒水的基本知识Basic knowledge of alcoholic beverage02/ 一、酒水的基本知识 Basic knowledge of alcoholic beverage(一)酒的概念 The concept of wine酒是一种用水果、谷物、花瓣或其他含糖或淀粉的植物经过发酵、蒸馏等方法产生的一种含酒精的饮料。基本上说任何含有25%-75%的乙醇,是可以喝的液体,都可以称为酒精饮料。Wine is a kind of alcoholic beverage which is produced by fruit, cereal or other plants with sugar or starch through the method of fermentation, distillation and so on. Basically, every drinkable liquid can be called alcoholic beverage with 25%-75% alcohol. 一、酒水的基本知识 Basic knowledge of alcoholic beverage(二)酒的分类 The classification of alcoholic beverage(1)按生产工艺酒可以分为酿造酒、蒸馏酒、混合酒,这是国际流行的分法。By the produce technology, the wine can be classified as brew wine, distilled wine and mixed wine, this is the international popular classification method. (2)按生产原料酒可分为果类、谷物类、杂物类。By the product material, the wine can be classified as fruit sort, cereal sort and sundries sort.(3)按服务性质酒可以分为餐前、餐后、佐餐酒。By the character of service, the wine can be classified as aperitif, dessert wine and table wine. (4)按不同的制作方法酒又可分为白酒、黄酒、啤酒、葡萄酒。By the different production methods, the wine can be classified as spirit, yellow rice wine, beer and wine. 二、常见酒水 Common alcoholic beverage红葡萄酒 red wine、白葡萄酒 white wine、香槟champagne、粉葡萄酒 rosé、中国白酒 white spirit、啤酒 beer苏打水 soda water、矿泉水 mineral water、气泡水 sparkling water、果汁 juice、茶 tea、coffee 二、常见酒水 Common alcoholic beverage(一)白酒 Spirit(1)白酒的特点Character of the Spirit白酒,亦名烧酒、白干。它是高粱、玉米、番薯等粮食或某些果品,经发酵、蒸馏制成的一种酒类。酒质无色(或微黄)透明,气味芳香纯正,入口绵甜爽净,酒精含量较高,属于典型的烈酒。白酒在我国各地均能生产,但因工艺的差别而分成各种香型。当前最著名的白酒有茅台酒、五粮液酒、剑南春酒、西凤酒等。 二、常见酒水 Common alcoholic beverage(一)白酒 Spirit(2)白酒的饮用 How to drink the spirit 白酒可以净饮干喝,也可以用来助吃菜下饭,有时还可以泡药作引。不过,白酒不可与其他酒类的汽水、可乐等软饮料混合同饮,不然极易醉酒。在正式场合喝白酒,讲究以专用的瓷杯或玻璃杯盛酒。它们“襟怀”不大,所以喝白酒讲究“酒满敬人”和“一饮而尽”。喝白酒时,一般不需要加温、加冰,或以水对其稀释。 二、常见酒水 Common alcoholic beverage(二)啤酒 Beer啤酒是人类最古老的酒精饮料,是水和茶之后世界上消耗量排名第三的饮料。Beer is the most historic alcoholic bevera
