KopiluwakcoffeehasitsoriginsinIndonesia,homeoftheAsianpalmcivet.Thesecreaturesareapparentlyquitefondofcoffeebeansandarethoughttobeveryselectiveinthebeansthattheychoosetoeat,whichmaycontributetotheexcellentflavorofcivetcoffee.However,thisisnottheonlyexplanationwhycoffeebeansfromcivetdroppingshaveaspecialflavor.Recentstudieshaveshownthatwhenthecoffeebeanpassesthroughthedigestivetractofthecivet,itisexposedtoenzymes(酶),causingchemicalprocessesthatmaketheflavorofthebeanpleasant.Asaresult,coffeeexpertsclaimthatcivetcoffeeisbothsweetandlacksbitterness.
