Introduction Since Chinese dishes are gaining more and more popularity with foreigners for their long traditions and various flavors, the Chinese dish name translation becomes a newly- emergent and independent subject. Therefore, Chinese dish name translation takes an important mission to strengthen the exchanges between China and foreign countries. Improper translation will not only prevent foreign guests from understanding the dishes, but also destroy the image of Chinese culture. In fact, a large proportion of Chinese restaurants now offer a mess of wrong translations, or literal translations with misunderstanding meanings, and consequently make the foreign visitors puzzled?, lose the appetite and even doubt whether the so-called glory Chinese cuisine culture exists or not. As a result, improving the translation quality has become a major concern to Chinese people. Many experts have done much research from different perspectives on this translation, and concluded a large number of useful skills. Chen Jiaji in his paper A Tentative Study on the Ways of Chinese Dish Name Translation divides Chinese dish names into six categories, and accordingly offer six ways of translation. If possible, the translator can introduce the folk customs and tales about the dishes, but the words must be brief and simple1?. However, although the perspectives of the research and improvements on Chinese dish name translation are various, the analysis of the characteristics of Chinese dish names and the cultural differences which affect the translation is touched less. Therefore,the analysis of the characteristics of Chinese dish names and the cultural differences may be a new and feasible way. The thesis comprises six parts. The first part is an introduction.The second part is the development of Chinese dish name translation.The third part is the characteristics of Chinese dish name.The fourth part is Chinese dish name translatio
