第27卷 第2期 2OO6年4月 华南农业大学学报 Journal of South China Agricultural University Vo1．27，No．2 Apr．2006 上海浦东地区蔬菜硝酸盐与亚硝酸盐污染现状分析 侯 晶 ，陈振楼 ，姚春霞 ，陆利民 ，蔡 贞 (1华东师范大学 资源与环境学院，上海 200062；2上海市浦东新区农业技术推广中心，上海 201201) 摘要：对上海市浦东农业区蔬菜样品进行硝酸盐含量测定．结果表明：不同种类蔬菜硝酸盐含量高低依次为叶菜 类、瓜类、豆类、茄果类，大棚蔬菜硝酸盐含量明显高于大田．对蔬菜硝酸盐含量评价结果表明：大棚部分叶菜类蔬 菜硝酸盐污染严重；杭白菜、空心菜、毛菜、苋菜与青菜已达三级污染水平，其中毛菜三级污染指数达1．28．蔬菜亚硝 酸盐含量大小为叶菜类 豆类茄果类 瓜类，其中生菜、毛菜、扁豆、空心菜和苋菜超标，占样品总数的13．9％． 关键词：蔬菜；硝酸盐；亚硝酸盐；污染；评价；浦东新区 中图分类号：X144；S1 文献标识码：A 文章编号：1001—41~x(2006)02-0017·03 Analysis on the Present Nitrate and Nitrite Polution of Vegetable in Pudong of Shan ghai City HOU Jing ，CHEN Zhen—lou ，YAO Chun-xia ，LU Li—rain2，CAI Zhen~ (1 Colege of Resource and Environment，East China Normal University，S}眦glai 200062，China；2 Agriculture Generalize Center，Pudong，Shan ，Shansl~i 201201，China) Abstract：Both nitrate and nitrite contents of vegetable samples from the agricultural area in Pudong， Shanghai．were measured．The results showed that the nitrate content in the vegetable samples decreased orderly as leaf vegetables，melons，bean s and eggplan ts，an d the nitrate content of vegetables cultivated in the greenhouse Was much higher than that of vegetables of open field．Some leaf vegetables of greenhouse were seriously poluted by the nitrate，the nitrate—induced po lution in Chinese cab bage，swamp morning— glory，chicken’S feather veggie，amaranth ，an d greengrocery reached the third grade level，an d specially the nitrate—induced polution index of chicken’S feather veggie was 1．28．The nitrite content in vegetable samples Was in order of leaf vegetableslegumeseggplan tsmelons，an d the nitrite content of lettuce， chicken’S feather veggie，haricot bean，swam p momingglory an d am aran th ，which accounted for 13．9％ of the total vegetables，exceeded the polution stan dard． Key words：vegetable；nitrate；nitrite；po lution；assessment；Pudong District 多数品种蔬菜极易吸收氮素、富集硝酸盐．人体 摄人的硝酸盐约 81．2％来 自蔬菜 J．硝酸盐在人体 内可被还原成对人体有毒的亚硝酸盐，腌制的蔬菜 的亚硝酸盐含量也会在短期内急剧上升，引起高铁 血红蛋白症 ，转化后的亚硝酸盐可与人 胃肠中的含 氮化合物结合
