Abstract: The relationship between the characteristic quality of Pu-erh tea and its chemical constituents (polyphenols,
catechins, fl avonoids, theafl avins thea-rubigins, theabromine etc.) during processing was interpreted briefl y. The tea
pigments in Pu-erh tea had mutil-bioactivities. According to the formation and the chemical properties as well as struc-
tural characteristics (structure and function group) of humic acids, some chemical properties (structures and groups)
of humic acids, especially fulvic acids, was similar to that of the pigments in Pu-erh tea. Therefore, the bioactivies of
humic acids (fulvic acids) and therapeutic function as medicine should be similar to pigments extracted from Pu-erh tea.
This conclusion would provide a thought of studying and explore new fi eld of
