摘要obtained from the WPC concentration of 12% with denaturation temperature 70 ℃, time10 and pH 7. The films were then scored with weighted grade method from above properties (TS, PS, WVP, MC and So), the film with highest score was obtained from WPC concentration of 12%, denaturation temperature 80 ℃, time 15 min and pH 7.The results of antimicrobial test showed that: WPC based film with 200IU/ml Nisin had effective inhibition on the growth of Salmonella, Staphylococcus aureus, and Lactobacillus casei. However, the film with as high as of 200IU/ml Nisin showed no inhibition on the growth of Escherichia coli, Bacillus subtilis, yeast (Rhodotorula) and mold (Trichoderma spp., Aspergillus niger). The film with 0.125% clove essential oil (CEO) showed effective inhibition on the growth of Escherichia coli, Staphylococcus aureus, Salmonella, and Lactobacillus casei, however, Bacillus subtilis could be inhibited only when CEO concentration was above 0.25%, and yeast was inhibited when CEO concentration was above 1%. The better antimicrobial effect was observed when supplemented with both Nisin (500IU/ml) and CEO (1%).KEY WORDS: Whey protein concentration; Composite film; filming process technique; Antimicrobial propertyDissertation Type: Application fundamental study第1章 文献综述随着社会经济和科学技术的发展,物质生活水平不断提高,人们的健康意识和 环保意识逐渐增强。传统的塑料薄膜包装材料如聚乙烯、聚苯乙烯、聚酰胺等具有 良好的柔韧性、抗拉强度和穿刺强度,对O2 以及芳香化合物有较好的阻隔性和热 密封性,但它们对水蒸气的传递较差,容易在包装薄膜内形成水蒸气凝聚,导致微 生物滋长[1]。而且,这些原材料均不可再生,不能被生物降解,这样会导致环境污 染,从而引发严重的生态问题。面对日益恐怖的“白色污染”及安全性等问题,各 国都在努力寻找一种“绿色包装”材料来代替传统塑料包装,试图用其它可食性材 料替代这些材料,将环境再染程度减少到最小,并发挥其更优的综合性能。所谓 “绿色包装”是指对生态环境和人体健康无害,且能重复使用或再生利用,符合可 持续发展原则的包装[2]。在众多的“绿色包装”研究中,可降解、可食性膜的研制 成为社会的热点,并有取代塑料包装、纸包装之势。早在12至13世纪,我国就已用 蜡来涂覆桔子、柠檬,以延缓它们的脱水失重,延长果蔬货架寿命;英国人16世纪 已使用涂油法来减缓食品的失水;几十年来,大家熟知的糖果包装上使用的糯米 纸,包装冰淇淋的玉米烘烧包装杯,包装肉菜用的豆腐皮和包装肉馅的肠衣等都是 典型的可食性包装膜[3]。如今,国内外更是加大对可食性膜研究热点,据报道,美 国有8所大学的食品院系建立了可食性膜研究小组,研制出用于葡萄干、干酪和饼 干的可食性膜;美国雷诺兹钢铁公司推出一种专供微波烹饪的新型包装纸;日本以 豆渣为原料研制出一种遇热熔化的可食性包装料;澳大利亚推出可食性土豆容器, 成为畅销的食品包装[4]。可食性蛋白膜必将以其可食无污染、保鲜效果好、使用方 便
