摘要近年来,浓醪发酵是发酵酒精领域的一个研究热点,浓醪发酵具有提高设备 利用率和劳动生产率、降低管理费用、降低能耗和减轻酒糟处理负荷等优点,因 此具有广阔的应用前景。本文针对贵州丰富的芭蕉芋资源优势,以芭蕉芋为原料, 对酒精浓醪发酵工艺进行了研究。为了提高浓醪发酵中酵母的酒精耐受性,提高发酵醪酒度,对芭蕉芋酒精浓 醪发酵中的活性干酵母固定化工艺进行试验。以海藻酸钠为包埋材料,分别考察了海藻酸钠浓度、固化剂 CaCl2 浓度、凝胶球大小(造粒时针头大小 )、固定化 时间对固定化的影响。应用单因素实验和正交实验得到优化固定化条件为:海藻 酸钠浓度 2%,CaCl2 浓度 10%,针头大小为 6.5#,固定化时间为 18h,。在最佳固定化条件下进行酵母固定,将此固定化酵母用于芭蕉芋酒精浓醪发 酵,并对芭蕉芋酒精浓醪发酵工艺条件进行了研究。通过单因素试验考察了发酵 温度、发酵 pH、接种量等对酒精发酵的影响,应用正交试验法优化了发酵条件。 试验结果表明优化后的发酵条件为:发酵温度为 34℃,发酵初始 pH4.7,接种量 为 0.15%,发酵时间为 42h。优化后发酵醪中添加尿素(0.1g/100g 芭蕉芋粉),粗 糠 1g/100g 芭蕉芋粉,在优化条件下发酵酒精,500mL 三角瓶发酵成熟醪酒精浓 度高达 15.5%(v/v),淀粉利用率达到 95.0%。经过三次平行发酵其酒精度平均可 达到 15.3%(v/v),淀粉利用率在 92%以上。关键词:芭蕉芋;固定化;耐高温活性干酵母;浓醪发酵;海藻酸钠AbstractIn recent years,research on alcohol production has focused on very-high-gravity fermentation(VHGF).It can increase plant capacity and efficiency,decrease the labor costs and the consumption of energy,and relieve the load of potale’s disposal. VHGF has a bright applying future. According to the development of the Canna edulis Ker meal industry in Guizhou municipality , producing Canna edulis Ker meal alcohol was studied by high-gravity fermentation in this paper.To improve the tolerance to alcohol of the yeast in VHGF, and the alcohol concentration ,the immobilized technical conditions for high-temperature resistant highly-active dry yeast to produce alcohol with Canna edulis by high-gravity fermentation were studied , the sodium alginate was used as encapsulatingmaterial ,the concentration of sodium alginate, the concentration of CaCl2,the diameter of pinhead gelatin bulb, the immobilizing time were studied, by the single-factor experiments, orthogonal experiments, the optimum immobilized technical conditions were found as follow : the concentration of sodium alginatewas 2%, the concentration of CaCl2was 10%,the diameter of pinhead gelatin bulb was 6.5# , the immobilizing time were studied was 18h.The high-gravity fermentation process to produce alcohol with Canna edulis Ker were studied , the ferment
