苹果籽油脂肪酸及甘油三酯组成分析

摘 要：采用GC 分析溶剂浸提法所得苹果籽油脂肪酸组成，结果表明苹果籽油中主要含有6 种
脂肪酸，分别为棕榈酸、硬脂酸、油酸、亚油酸、花生一烯酸和亚麻酸，不饱和脂肪酸含量近80%；
胰脂酶水解甘油三酯表明苹果籽油sn–2 位脂肪酸以油酸、亚油酸为主，含量占90% 以上；RP–
主要包括11 种甘油三酯，其中LLL、OLL、OOL 占
HPLC–ELSD 分析了苹果籽油的甘油三酯组成，
70% 以上，进一步验证了苹果籽油属于油酸―亚油酸型油脂。

Fatty acids and triacylglycerides analysis of apple seed oil

Abstract ：Fatty acid composition of apple seed oil after solvent extraction was analyzed by GC .
Results showed that there were 6 kinds of fatty acids in apple seed oil ，including palmitic acid ，stearic
acid ，oleic acid ，linoleic aicd ，eicosenoic acid and linolenic acid. Of which the unsaturated fatty acids
were nearly 80%. sn–2 FFA composition was analyzed by hydrolysis of apple seed oil with porcine
pancreatic lipase ，results indicated that the main FFA were oleic acid and linoleic acid ，which account
for more than 90%.The TAG composition was determined with 11 kinds of TAGs determined by RP–
HPLC–ELSD ，the content of LLL、OLL、OOL account for more than 70%. Thereby apple seed oil was
further certified as the oleic–linoleic group oil.
