第PAGE 13页（共 numpages 14页） 考虑耗损控制的生鲜农产品供应链优化研究 ——以涪陵区生鲜榨菜为例 摘 要：随着我国经济迅速发展，人民生活水平不断提高，市场对生鲜农产品的需求量逐年增加，但数量和价格已经不再是消费者选择的唯一标准，生鲜农产品的质量和安全也受到消费者重视，生鲜农产品供应链的运作也就相应有了更高的要求。目前我国生鲜农产品流通体系已经基本形成，但是，生鲜农产品供应链的运作水平较低，流通成本高，流通效率低等境况仍然没有得到根本性的改善。对此，本文以控制损耗为切入点，以降低供应链损耗和增加利润为目标，结合涪陵区生鲜榨菜的发展概况和供应链结构特点，通过实地调查搜集涪陵区生鲜榨菜耗损状况并据此提出生鲜农产品供应链的运作优化建议，增加农民收益。 关键词：耗损控制；生鲜农产品；生鲜榨菜 Abstract：With the rapid development of Chinas economy and the continuous improvement of peoples living standards, the market demand for fresh agricultural products is increasing year by year. Quantity and price are no longer the only criteria for consumers to choose. The quality and safety of fresh agricultural products are also valued by consumers, and the operation of fresh agricultural products supply chain has corresponding higher requirements. At present, the circulation system of fresh agricultural products has been basically formed in China. However, the situation of the supply chain of fresh agricultural products is still not fundamentally improved, such as low level of operation, high circulation cost and low circulation efficiency. In view of this, this paper takes the control of consumption as the breakthrough point, aiming at reducing supply chain losses and increasing profits, combines with the development situation of fresh mustard in Fuling District and the characteristics of supply chain structure, collects the consumption situation of fresh mustard in Fuling District through field investigation, and puts forward some suggestions for optimizing the operation of fresh agricultural products supply chain, so as to increase farmers income. Key words：depletion control；Fresh agricultural products；Fresh musta 一、引言 我国是农业生产大国，生鲜农产品种类繁多、物产丰富，但是一直以来，我国农业生产产值就比较低，虽然在最近的十几年中，生鲜农产品的产量在不断增加，但是生鲜农产品的耗损情况却不容乐观，生鲜农产品的产值不仅涉及到农民的收入，更是影响着农业经济的发展。而涪陵区生鲜榨菜一直是涪陵区农业发展支柱之一，然而每年到了生鲜榨菜的销售旺季，很多种植户却头疼起来，由于地区交通不便捷,缺乏网络建设、物流配送的设施设备,再加之农产品在生产和流通过程中易腐烂、易变质的特点，使得涪陵生鲜榨菜流通环节的耗损情况也不容乐观。因此广受外界的关注， 而如何使涪陵区生鲜榨菜流通渠道畅通、高效且耗损率低，成为了备受社会关注的问题，
