题目：年产1500吨冷冻鱼丸工厂设计 　　The design of annual output 1,500 tons frozen fish ball plant 摘 要 　　根据市场调查显示，我国冷冻食品存在着巨大的潜在市场。受影响2020年全国餐饮经济增长率出现下滑，但冷冻食品却出现了销售额增长，甚至出现了供不应求的情况，尽管如此我国冷冻食品的人均购买量远不能发达国家相比，有很大的发展前景。 　　本文以鱼的肌肉作为加工原料，构成肌纤维的肌动蛋白与肌球蛋白易受到盐类的影响从而水解的原理，而肌动蛋白与肌球蛋白在溶解同时吸收水并相互结合，并在加热的条件下盐溶性蛋白质发生凝固收缩，凝固的盐溶蛋白质经过相互联系后形成一个具有弹性的网状结构,加热结束后制品会丧失其可塑性和粘度,形成一种充满弹性的鱼丸制品 　　本文也介绍了拟定工厂选址、拟定工厂建设规模、设备选型、生产车间布置以及人员编制。此外，还进行了物料衡算、水电用量估算和技术经济分析。本设计以生产工艺设计和车间布置为重点，据此绘制了生产工艺流程图和鱼丸生产主车间平面布置图。 关键词：冷冻 ；鱼丸；鱼糜；工厂设计 　　The design of annual output 1,500 tons frozen fish ball plant Abstract 　　According to the market survey, there is a huge potential market for frozen food in China. Affected by the epidemic, the growth rate of national catering economy will decline in 2020, but the sales of frozen food will increase, and even the supply will exceed the demand. Nevertheless, the per capita purchase of frozen food in China is far less than that in developed countries, and has a great development prospect. 　　In this paper, the muscle of fish is used as the raw material. The actin and myosin, which constitute muscle fiber, are easily affected by salts and thus hydrolyze. Actin and myosin absorb water and combine with each other while dissolving. Under the condition of heating, the salt soluble protein coagulates and contracts, and the coagulated salt soluble protein forms an elastic network after mutual connection After heating, the product will lose its plasticity and viscosity, forming a fish ball product full of elasticity. 　　This paper also introduces the proposed plant location, proposed plant construction scale, equipment selection, production workshop layout and staffing. In addition, material balance, water and electricity consumption estimation and technical and economic analysis are carried out.
