Objective: Investigating appetite parameters, physiological measurements and within-subject relationships after consumption of a single macronutrient, subject-specific carbohydrate meal in liquefied versus solid form, controlled for energydensity,weightandvolume. Design: Inacross-over design, tenmalesubjects (age=21.163.9y, BMI=22.461.2kg/m2) consumed asolid (CS,whole peaches +750ml water)andliquefiedcarbohydrate (CL,peach blendedin 500mlwater +250mlwater)lunch. Appetite profiles,insulin-,glucose-andghrelinconcentrationsweremeasuredoverthreehours.Post-prandialrelationshipsbetween appetiteandbloodparameterswerecalculatedusingsubject-specificregressionanalyses. Results:FullnessratingswerehigherintheCL(8565mm)comparedtotheCScondition(7368mm)at20min(p,0.03). Glucoseconcentrationspeaked20to30minafterthestartofthelunchintheCLcondition,and30to40minafterstartof theCScondition.Correspondingly,insulinconcentrationswerepeakedat20–30minintheCLcondition,andat30–40min intheCScondition.AUCorconditionxtimeinteractionswerenotdifferentcomparingtheCLandtheCScondition.Insulin wassignificantlyhigherintheCScomparedtotheCLcondition40minafterthestartofthelunch(p,0.05).Fullnessscores weresignificantlyrelatedtoinsulinconcentrationsbutnottoglucoseconcentrations;desiretoeatscoresweresignificantly associatedwithghrelinconcentrationsinboth,theCLandtheCScondition.Therelationshipbetweenfullnessscoresand glucoseconcentrationswasnotstatisticallysignificant.
