食品研究与开发 2013 年 6 月 基础研究 Food Research And Development 第 34 卷第 12 期 1 DOI :10.3969/j.issn.1005-6521.2013.12.001 双酶法制备小麦微孔淀粉的工艺条件优化 张国权,张兰月,罗勤贵,梅仕峰 (西北农林科技大学 食品科学与工程学院,陕西 杨凌712100 ) 摘 要 :为丰富微孔淀粉类型、拓展小麦淀粉的应用领域,以小麦 A 淀粉为材料,采用 α-淀粉酶与糖化酶双酶协同水 解法优化小麦微孔淀粉的制备工艺条件。结果表明:影响小麦微孔淀粉吸水率的因素依次为反应温度、酶用量、反应 时间和 pH ,影响吸油率的因素依次为反应温度、pH、反应时间和酶用量。制备小麦微孔淀粉的适宜条件为,糖化酶与 α-淀粉酶的配比 6 ∶ 1,淀粉乳浓度 20 % ,反应温度 55 ℃ ,酶用量 1.25 %,pH4.5 ,反应时间 16 h,此条件下小麦微孔淀 粉的吸水率为 115.14 %,吸油率为 103.46 %,其吸附性能远高于原淀粉。 关键词 :小麦A淀粉;微孔淀粉;双酶水解;工艺条件 Optimum Preparation Conditions for Wheat Micorporous Starch by Double Enzyme Hydrolysis Method ZHANG Guo-quan , ZHANG Lan-yue , LUO Qin-gui , MEI Shi-feng (College of Food Science Engineering ; Northwest A F University , Yangling 712100 , Shaanxi , China ) , Abstract : In order to enrich the microporous starch types and broaden the application fields of wheat starch the wheat A type starch was used as material and the technological conditions of preparation of microporous starch using co -hydrolysis by α -amylase and glucoamylase were optimized.
