(一)The concept of animal food hygiene:
animal food hygiene is named veterinary sanitary ecsomatics and veterinary public hygiene again. It based on the theory of veterinary medicine and public hygiene to study meat、milk、eggs and aquatic products animal food and their by-product for sanitary surveillance and inspection of product、storage、transportation and marketing,then to ensure the user security for preventing Amphixenosis and animal propagation of disease. It is a comprehensive and applied science.

二.The purpose and responsibility:
1.The purpose:
To guarantee the hygienic quality of animal food and safeguard the consumer safety,to utilize various kinds of animal food and their by-product with safety and benefits and improve sanitation,to prevent Amphixenosis and animal propagation of disease and protect mankind relying on the environment,to improve the vital quality.
2.The responsibility:
To prevent the dissemination of Amphixenosis ;To prevent food-poisoning and the pollution of noxious substance ;To maintaince commercial credit and reputation of animal food ;To execute and consummate food sanitary codes.
三.The history and prospect of animal food hygiene
(一) The historic review
The overseas: After the 16 century and the renaissance,France and Italy began to carry out butchering test,Russia began from 18 century and America in 1906. All in all,up to the 19 century first,developed international trade and meat cold storage,then meat sanitary modern system was established.
The domestic: From now 2500,Zhou dynasty was the earlist origin of meat test. Dong han dynasty Zhangzhongjing booked 《 summary》,In 1928 Guomingdang department of Health gave the rule up to 1935,but only for fresh meat and iced meat test;In 1949,after building up a state,food hygienic test was began formally.
