餐馆经营失败的系统分析 作为第三产业，我国餐饮业市场发展迅速，为扩大内需、安置就、Ik和促进国民经济持 续、健康、稳定发展做出了突出贡献。但是由于竞争日益激烈，内冇不断激增趋于饱和的 国内餐饮企业，外奋虎视眈眈待机大举进攻的国际饭店管理集团，餐馆经营的问题也日益 凸现。 过去的相关研究主要主要集中在经营失败的原因与补救措施等方面，本文在冋顾和总 结前人在经营失败分析研究成果上，基于调查统计的餐馆经营指标的AHP评价，对不同原 因对影响餐馆经营的重要程度做进一步探讨，提出实质性的建议。 关键词：餐饮行业经营失败系统分析层次分析法 System analysis of the failure of restaurant management ABSTRACT As the third industry, the rapid development of China’s catering industry market，has made outstanding contributions to expand domestic demand，add employments and promote sustained， healthy and stable development. However，due to increasing competition, there are an ever-increasing number of the domestic catering enterprises surrounded by more and more large-scale international hotel management groups. Now restaurant management is becoming increasingly a more important problem. Related research over the past focused on the causes of failure and remedial measures. On the foundation of previous research results in business failure analysis，the paper constructed the evaluation index system by AHP evaluation based on restaurant management indicators, studied the degree of importance of different factors to restaurant business and made substantive recommendations.
