ABSTRACTAs ABSTRACT As the second】a略est expon canned products of China,Canned peach are wide】y loVed by consumers for its delicacy and nutrition.Because of the influence of many factors such as geographical and climatic conditions,physical and chemical indicators,sensory characteristics and aroma of dif诧rent regions and di虢rent Varieties of peach are quietly various.HoweVer’the product is lack of unifonn indicators,and quality infomation is imperfect,which restricts the consumption of canned peache to cenain extent.In GB/ T135 16—92,the description IIegarding senso叫quality grade of canned peaches is rather Vague and qualitatiVe,and there is no specific quantitatiVe description.The purpose of this research is to establish basic quantitatiVe senso呵eValuation method of canned peach, through combine instmmental analysis and senso叫analysis.This process includes the selection of reviewers,training, build vocabula巧 of description, reference selection, senso巧eValuation,instrumental analysis,statistical analysis.It can proVide theoretical basic guidance and technical means for production,the establishment of standardization and unincation of the canned peach quantitative sensory eValuation methods.Its main contents f.01Jo、Vs: First of all,screening and training for members of the sensory evaluation,the evaluators then discussed with literature on senso叫properties of canned peaches,jointly selected six prominent feature descriptorS:color,hardness,sweet,sour,mJi咄oVerall acceptability.Then select the reference material Various sensory indicators.
