Abstract Porous starch is a new type of modified starch,as the absorption material , ‘?it is non-toxic ,safe and biodegradable. It has been focused on by domestic and foreign experts and scholars. With the research and development of porous starch,it has been widely used in food,medicine and public health ,agriculture , daily吨lse chemical industη. In this study,comstarch as raw material , pretreatment of raw materials of the porous starch preparation ,and the application of porous starch were studied. 丁he main results are as follows: ‘ ? In this paper,potato starch by gelatinization was used to prepare porous starch at low tempera阳re. The effects of temperature and different proportions of ethanol and water treatment on it were studied. 丁he porous starch was characterized by scanning electron microscopy (SEM).ηle pore size,oil absorption and water absorption changes of porous starch with the different proportions of ethanol and water solution treatment ,were sωdied. Using citric acid as esterification reagents,potato starch were esterified under solvent-free conditions. Moreover,using the degree of substitution (DS) as an evaluating paramet吼 the optimal reaction conditions were confirmed through orthogonal test.The e叮ects of molar ratio of the raw material ,reaction 阳mperature and reaction time on the degree of substitution (DS) of starch esters were studied. 丁he products are characterized by FT-IR,SEM and TG. The introduction of the hydrophobic ester decreased thermal s阳bili町, but improved water reslstance . As absorbing material ,study the adsorption of the porous starch in oil water system and ethanol - water system.
