超声波辅助酶解黑豆蛋白工艺优化

摘要:利用不同蛋白酶酶解黑豆蛋白,根据水解度选择最佳用酶为碱性蛋白酶,采用超声波辅助
酶法提取黑豆肽;分析超声波处理时间、功率、加酶量、pH、酶解时间及底物浓度对水解度2L--苯
代苦味酰基自由基(DPPH·)清除能力影响。在单因素实验基础上,依据响应面分析确定最优提取
工艺条件为:超声功率1029.27W、酶解pH8.64、底物浓度4.04%、加酶量4.10%、温度500C、超声
时间20min,在该条件下可得DPPH自由基清除率为86.37%的黑豆肽。
