Abstract Hawthorn fruit juice is rich in nutritions and fresh colour with special aroma. But too much acidity in the juice has been always the factor that influents its production and consumption. Ion exchange resins were used in the experiment to reduce the acidity of hawthorn juice due to the situation. The results showed that organic acids were reduced to about 10 g/L, with flavonoids losing less. First, the resin proper to reduce the acidity was screened in the experiment. Weakly basic anion exchange resin D301G was selected to be the best resin which can effectively reduce the acidity of hawthorn juice in the meant of testing organic acids and flavonoids in hawthorn juice deacidificated by three resins D370, D301G, D382. D301G resin can reduce the acidity effectively, adsorb less flavonoids and be easily regenerated. In the following experiment, this resin was used. Two regeneration ways— single-pass regeneration and batch regeneration — were discussed in the test. The effects of two regeneration ways on the organic acids and flavonoids were compared. In single-pass regeneration, the elution time of organic acids and flavonoids was not easily distinguished. While in batch regeneration, the elution time was lightly discriminated which was beneficial to remain flavonoids. And batch regeneration was selected as the better way ultimately. The elution law of batch regeneration was used. Hawthorn juice was deacidificated by resin after batch regeneration in which most organic acids were eluted but flavonoids was eluted less. Hawthorn juice with about 10 g/L and most flavonoids was successfully obtained. The results will be benefit for the production of hawthorn juice deacidification.
